HAM & CHEESE “SCONE”WICHES

Ingredients:
cranberry Wensleydale cheese
mini orange cranberry scones
black forest ham

Directions:
This “upgrade” is as easy as it gets! Carefully slice scones in half, then pile high with slices of cheese and ham. Serve cold. Make it your own by changing up the scone, cheese or meat flavors.

BANANAS FOSTER BITES

Ingredients:
1 store-bought cinnamon scone, quartered
4 tbs (or 1/2 stick) butter
1/2 cup brown sugar
1 banana, thinly sliced
2 oz dark rum
whipped cream

Directions:
Dessert for breakfast? Yes, please! Heat a saucepan over low heat. Add butter and let melt halfway, then stir in brown sugar until butter and sugar are completely melted. Watch closely to avoid burning. Add two ounces of dark rum and sliced banana until alcohol bubbles. Immediately remove from heat. Scoop warm sauce over quartered cinnamon scones and top with whipped cream and another drizzle of sauce.

EASY LEMON ELDERFLOWER GLAZE

Ingredients:
2 cups powdered sugar
1 large lemon, juiced
zest of one lemon
2 oz. elderflower liqueur
store-bought blueberry scones

Directions:
Want your store-bought scones to look like they came from the fancy bakery down the street? Measure powdered sugar into a medium mixing bowl, then zest a large lemon directly over the bowl. Add the juice of one lemon and two ounces of elderflower liqueur, whisking all ingredients together thoroughly until there are no clumps. Place store-bought blueberry scones on a cookie sheet with a rack, then drizzle glaze over scones and let harden (about 10 minutes). Serve immediately.
